I’m always on the lookout for new apple pie recipes. Lattice, crumble or dutch; salted caramel, cider or cranberry … I’ve made them all. I’ve experimented with all types of pastry too … butter, shortening, lard and various combinations of each. Every year when I find myself with a pile of apples, I’ll try something new or go back to an old favorite. Just depends upon my mood. My middle godson, the lover of apple pies, is often a recipient as an enthusiastic and receptive audience is always welcome in my book. A few months ago it was his birthday and it just so happened that his parents were out of town so I hung out with him for a few days. I think I was there pretty much to make sure the house was still intact when the folks came home but I didn’t mind a bit as hanging out with this kid is fun. He took me out to dinner (so sweet!) and I took him to the movies (Deadpool. He had to explain a lot of backstory for me.) To celebrate his birthday, I made him an apple pie.

Does anyone need another recipe for apple pie? Maybe. Hell, I’ve got three of them on this blog, each one a little different. Guess it depends on what you’re looking for but I think that there’s always room for another. I’ve covered the bases – classic, amped up with salted caramel and even fancy in a French inspired tart. But what about an apple pie that was completely packed with pure apple flavor, holding nothing back? Scoot over and make some room; there’s a new addition to the line up.

There are chocolate people; there are vanilla people.  And then there’s me.  I am firmly, proudly and happily a caramel person. There is nothing I adore more than a rich, buttery caramel.  Oh my.  As a kid, I was all about See’s Vanilla Caramels and always got a box on special occasions.  No nuts, no chocolate, no marshmallow – just sweet, delicious caramel.  I would save, hide and hoard that box to make them last as long as possible. When See’s changed the recipe and added nuts, it was over.  I ended my long relationship with that little box.  They just weren’t the same and I went without for a long while.  It was a sad time.  At some point, I realized I could just make them myself.  That was a banner moment.  A triumph, in fact.
